Ready to meet your new favorite slow-cooker pork recipe? Cochinita pibil – also called puerco pibil or cochinita con achiote – is a slow-cooked pork recipe from the Yucatán Peninsula. This easy Mexican recipe is loaded with flavor and just begs for a bowl of guacamole next to it.
To make this cochinita pibil recipe you will need to gather the following ingredients from your fridge and pantry: a pork butt, achiote paste, orange juice, lemon juice, apple cider vinegar, a habanero pepper (see Recipe Notes), ground cumin, smoked paprika, ground coriander, and pickled red onions and corn tortillas for serving.
Cochinita pibil is prefect for taco night! You could serve with refried beans, Spanish rice or pico de gallo.

Ingredients
- 1 pork butt (2 to 3 pounds)
- 3 - 4 tablespoons achiote paste (try this homemade achiote paste substitute)
- 1/3 cup orange juice
- 1/3 cup lemon juice
- 1/3 cup apple cider vinegar or white vinegar
- 1 habanero pepper, seeded and finely chopped (wear gloves when handling this pepper) or 1 jalapeno
- 2 1/2 teaspoons cumin
- 2 1/2 teaspoons smoked paprika
- 1 teaspoon ground coriander
- pickled red onions, for serving
- corn tortillas, for serving
Recipe Notes
- The habanero adds just a touch of spice, but if you don't like spice at all, you could leave it out or use a milder pepper like serrano or jalapeno.
- Wear gloves when working with hot peppers. And never touch your eyes!
- Store any leftover meat in an airtight container in the fridge.
Here's how to make it:
- Season the pork butt with salt and pepper, then rub it with the achiote paste. Put it into a slow cooker.
- In a bowl, whisk together the orange juice, lemon juice, vinegar, chopped pepper, cumin, paprika and coriander. Pour this mixture over the pork butt.
- Cook on low heat for about 8 hours or until pork is tender.
- When pork is cooked, shred it using two forks or meat claws. Serve with pickled red onions, tortillas and other desired toppings.
