I have to warn you, this summer strawberry spoon cake recipe is so delicious you might want to eat a lot of it! Although this summer dessert is not high in sugar, only three-quarters of a cup in the whole cake, there is something about it that makes you want to eat just a bit more than one serving. This strawberry cake recipe is a keeper.
The strawberry dessert has a cake batter on the bottom and macerated strawberries on the top. It takes only 10 minutes to get this cake ready to be popped into the oven, and the resulting dessert might become your new favorite!
To make this quick and easy strawberry cake recipe, you will need just seven simple ingredients. Here is your short and sweet shopping list: butter, fresh or frozen strawberries (check out the health benefits of strawberries), light brown sugar, whole milk, kosher salt, flour (all-purpose or gluten-free) and baking powder.

Ingredients
- 1/2 cup unsalted butter (1 stick), melted, plus more for greasing pan
- 2 - 3 cups fresh strawberries, hulled, or frozen strawberries, thawed (use more if you love berries, a bit less if you want the cake to poke through the top)
- 2/3 cup light brown sugar, packed (divided)
- 1/2 cup whole milk, at room temperature
- 1/2 teaspoon kosher salt
- 1 cup all-purpose flour or gluten free-flour
- 1 teaspoon baking powder
Here's how to make it:
- Grease an 8x8-inch baking pan with butter and preheat the oven to 350 degrees F. In a small bowl, add the strawberries and 1/3 cup brown sugar.
- Use a fork to smash the strawberries into smaller chunks and set to the side. (Try this recipe with blackberries, blueberries or raspberries.)
- Make the batter by adding the butter, remaining 1/3 cup brown sugar, milk and salt to a bowl. Stir to combine.
- Add the flour and baking powder.
- Whisk until smooth.
- Spread the batter into a thin layer in the pan.
- Add the strawberry mixture on top of the batter.
- Place into the oven and bake for 25 to 30 minutes. The strawberries will be glazed and bubbly.
- Remove from the oven and cool for 15 minutes. If desired top with vanilla ice cream and enjoy! Store the cake in an airtight container in the fridge.
