This Ultimate Breakfast Casserole Recipe May Change Your Mother's Day Plans (One Pan)

Eggs. Bacon. Sausage. Potatoes. Oh, my. Print this easy brunch recipe out and get it on your Mother's Day or Father's Day breakfast or brunch plans ASAP. The breakfast or brunch casserole recipe looks really impressive, but is simple to make. Mom would love this hearty breakfast on Mother's Day.

The one-pan breakfast casserole recipe is made with russet potatoes, eggs, fresh garlic cloves, onion, shredded Italian cheese, chopped green onions, Italian sausage, red bell pepper, fresh parsley and bacon. Wow, right? All the ingredients cook in one pan and in about 15 minutes. 

Serve this hearty breakfast dish with a side of fresh fruit, coffee, orange juice or a mimosa. (We think mom wants a mimosa, for sure!)

Ingredients

  • olive oil
  • 5 medium russet potatoes, chopped
  • 8 eggs
  • 2 cloves garlic, sliced
  • 1 small onion, chopped
  • 8 ounces Italian cheese, shredded
  • 3 green onions, chopped
  • 12 - 16 ounces (1 package) Italian sausage, cooked and crumbled
  • 1 red pepper, chopped
  • 1 bunch fresh parsley
  • 12 - 16 ounces (1 package) bacon, cooked crisp

  • You could use all bacon or all sausage.
  • Instead of bacon, try crisp prosciutto cubes.
  • For a little spice, add some crushed red pepper flakes.
  • For freshness, garnish with fresh chopped herbs. 

Here's how to make it:

  1. Heat some olive oil in a skillet. Add the potatoes and cook for about 7 minutes on each side until golden brown.
  2. Add the cooked sausage on top of the potatoes. Next add the red pepper, scallions and garlic on top of the sausage and a handful of cheese.
  3. Crack the eggs into a bowl, then pour them over the top of the potatoes. Season with salt and pepper, to taste.
  4. Once the eggs are cooked through, add the chopped parsley.
  5. Remove the skillet from the heat. Slide or spatula out of skillet and onto a cutting board. Top with the cooked bacon and serve.
