With only five ingredients and in just about 30 minutes, this flavorful Mediterranean-inspired chicken dish is ready to serve. To make this easy, delicious chicken dish, here are the gluten-free ingredients you'll need to gather: boneless/skinless chicken breasts, mayonnaise, Parmesan cheese, garlic powder and dried oregano. All you do is mix up the garlic mayo topping then spread it over the chicken in a baking dish. Bake up the garlic mayo chicken until it's cooked through and golden, then serve it however you like. Ingredients
- 2 boneless/skinless chicken breasts (I sliced mine in half)
- 1/4 cup mayonnaise
- 1/4 cup Parmesan cheese, grated or shredded
- 3/4 teaspoon garlic powder
- 3/4 teaspoon dried oregano
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
Here's how to make it:
- Place the chicken into a baking dish that's been sprayed with cooking spray. Season the chicken on both sides with salt and pepper, to taste, if desired. (Instead of chicken breasts, you could use boneless/skinless chicken thighs.)
- In a small mixing bowl, add the mayonnaise, Parmesan cheese, garlic powder and oregano. Stir to combine.
- Spread the garlic mayo over the chicken, ensuring that it's completely coated in the mixture.
- Bake in an oven that's been preheated to 425 degrees F until the chicken is cooked through and golden, about 20 minutes. (Chicken is considered done when it reaches 165 degrees F on a food thermometer.) Remove from oven and serve. Garnish with fresh chives or other herbs, if desired. Store leftover chicken in an airtight container in the refrigerator and reheat in the microwave.
