Air fryer recipes – especially using boneless/skinless chicken thighs – are my obsession lately. This latest air fryer chicken recipe uses an ingredient that I also love cooking with that adds not only flavor, but moisture and creaminess: mayonnaise. Combined with flavorful balsamic vinegar, this magic mayo balsamic chicken recipe was another winner, winner, high-protein dinner.
You only need six simple ingredients to make this air fryer recipe. Here is your short gluten-free shopping list: boneless/skinless chicken thighs, mayonnaise, balsamic vinegar, garlic powder and smoked paprika. For even more flavor, grab the optional Dijon mustard. The ingredients are stirred together and used to coat the chicken thighs. Air fry the chicken for about 14 minutes, which gives you time to make the side dishes, and dinner is done!

These juicy, flavor-packed chicken thighs are delicious served with a grain and a fresh vegetable. I served mine with my canned green beans recipe, quinoa and fresh broccoli.

Ingredients
- 4 boneless/skinless chicken thighs
- 1/8 cup mayonnaise
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1 teaspoon Dijon mustard (optional)
Here's how to make it:
- Put the mayonnaise, balsamic vinegar, garlic powder, smoked paprika and Dijon mustard, if using, in a bowl. Season with salt and black pepper, to taste.
- Stir until combined.
- Add the chicken and stir to coat completely. (If you have time, you can let the chicken marinate in the sauce for up to 30 minutes.)
- Put the chicken in a single layer into the air fryer basket. (I like to use an air fryer liner on the bottom of the basket.)
- Air fry at 400 degrees F for 12 to 14 minutes, or until chicken is cooked through. (You can flip it over halfway through if you want. I did not flip it.) Chicken is cooked through at 165 degrees F on a food thermometer.
- Serve. (I had some balsamic glaze, so I drizzled a little over the top of the chicken for even more balsamic flavor.) Store any leftovers in an airtight container and reheat in the microwave.
