Ingredients

• 1 cup peanut butter (crunchy or creamy peanut butter, not the all-natural kind), at room temperature
• 1/2 cup granulated sugar
• 1 teaspoon baking soda
• 1 large egg

Here's how to make it:

1. In a large mixing bowl, add the peanut butter and sugar. Mix well to thoroughly combine. Add the baking soda and egg. Mix to thoroughly combine. (You can use an electric mixer, hand beaters or a sturdy fork. You can use crunchy or creamy peanut butter, but regular peanut butter works better than the all-natural kind.)
2. Form dough into balls that are about 1 1/2 inches each and drop them onto baking sheets that have been lined with parchment paper or sprayed with cooking spray.
3. Flatten each cookie with a fork, pressing it over the cookie balls in a crisscross pattern. (The number of cookies depends on the size of the balls you form.)
4. Bake in an oven that's been preheated 350 degrees F oven until cookies are lightly brown around the edges, about 10 to 12 minutes. Do not over-bake.
5. Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely. Store leftover cookies in an airtight container.
