Mediterranean Tomato Salad Recipe Is Fresh & Savory Italian Goodness (4 Ingredients, 5 Minutes) Mediterranean Diet Recipes Farm to Table Recipe Salads Italian Recipes Gluten-free Vegetarian Vegan Side Dishes
I'm feeling lucky that my local farmers' market stays open until the end of October because it means that we can enjoy the vine-ripe tomatoes just a little bit longer. On my most recent trip to the market, I found some beautiful heirloom tomatoes at their peak of ripeness. I also had a great discussion with a local Italian chef who was selling some of the olive oil, balsamic vinegar and dried oregano that she imports directly from Italy. When I told her I had just scored these amazing tomatoes, a tomato salad was born.
