It's simple to make yet full of fall flavor! The fig preserves help keep the chicken moist and juicy while baking and the end result is just delicious. If you've ever spread fig jam over a soft cheese like brie, then you know how lovely that natural caramel flavor can be when contrasted with something savory. Now imagine that mild honey-like sweetness mixed with a few other ingredients then spread over chicken. Yes, this fig jam glazed chicken recipe has incredible flavor, and the zesty taste comes from just five simple ingredients that create a sweet and savory flavor explosion.
To make this tangy delicious high-protein dish, here are the gluten-free ingredients you'll need to gather: boneless/skinless chicken thighs (or breasts), fig jam (or preserves), Dijon mustard, honey (check out the health benefits of honey) and apple cider vinegar (ACV has health benefits, too). All you do is combine four of the ingredients into a sticky sauce, spread the sauce over the chicken then bake until it's cooked through and bubbling. Very simple and a wonderful addition to a healthier Mediterranean diet.
Serve this moist and juicy chicken for dinner any day of the week with your favorite side dishes. I served it over rice to soak up the irresistible sauce. The rest was almost irrelevant, LOL!
Cuisine: American
Prep Time: 10 minutes
Cook Time: 35 to 45 minutes (ovens vary)
Total Time: 45 to 55 minutes
Servings: 8
Ingredients
- 2 pounds boneless/skinless chicken thighs (or breasts)
- 1/2 cup fig jam (or preserves)
- 1/3 cup Dijon mustard
- 1/3 cup honey
- 1 tablespoon apple cider vinegar
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
Here's how to make it:
- In a 13x9-inch baking pan or casserole dish, add the chicken. Season chicken with salt and pepper, to taste, if desired.
- In a medium mixing bowl, add the fig jam, Dijon mustard, honey and apple cider vinegar. Whisk to combine.
- Spread the sauce over the chicken, ensuring the chicken is evenly covered in the sauce. (If you'd like to marinate the chicken first, cover and refrigerate for a couple of hours before baking. Instead of chicken thighs, you could use boneless/skinless chicken breast but keep in mind that this may affect cooking time.)
- Bake in an oven that's been preheated to 350 degrees F until cooked through and bubbling, about 35 to 45 minutes. Remove chicken halfway during baking time to stir/baste it with the sauce. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Serve immediately over rice or with your favorite sides. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
