Ingredients
- 3 small overripe bananas, mashed
- 1/2 cup natural peanut butter
- 2 cups rolled oats
Optional Ingredients
- 2 tablespoons real maple syrup
- dash of salt
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Here's how to make it:
- In a large mixing bowl, add the mashed bananas, peanut butter and oats (and the maple syrup and salt, if using). Stir to combine. (Oats are naturally gluten-free, but if you need to be sure, use gluten-free oats.)
- Fold in the chocolate chips and walnuts, if using. (You can use milk chocolate, semisweet or dark chocolate chips.)
- Drop by tablespoons-full onto parchment paper-lined baking sheets and flatten a bit (these cookies will generally stay the same shape and size as how they're formed). Bake in a preheated 350-degree F oven for about 8 to 10 minutes, until just turning lightly brown. Do not over-bake. (The number of cookies depends on the size of the cookies you form. I made 18 cookies.)
- Allow to cool a bit before serving. Store cookies in an airtight container on the counter, or in the refrigerator or freezer.
