These high-protein chocolate chip cookies have an extra kick of protein from cottage cheese. I made the batter for these high-protein chocolate chip cookies, then rolled the dough into small balls and froze most of the batter because I like cookies right out of the oven. Read more about my hack for freezing cookies.
To make this high-protein recipe, you'll need to grab the following ingredients from your fridge and pantry: cottage cheese, an egg, maple syrup, almond flour, baking powder, chocolate chips and vanilla extract. Make sure you don’t overcook these gluten-free cookies because they are very small. If you like your cookies a bit bigger, simply make 16 balls out of the dough instead of 24.
Nibble on these sweet protein cookies during the day for an energizing snack or serve them for dessert after any dinner with a glass of milk or cup of coffee. The cookies also pack well for lunches.

Ingredients
- 1 cup cottage cheese
- 1 egg
- 1/3 cup maple syrup (pure is always best)
- 1 teaspoon vanilla extract
- 2 1/2 cups plus 1 tablespoon almond flour
- 3/4 teaspoon baking powder
- 1/3 cup chocolate chips
Here's how to make it:
- Put the cottage cheese, egg, maple syrup and vanilla in a food processor or blender. Turn onto medium and mix until smooth.
- In a medium mixing bowl, add the flour and baking powder. Stir to combine.
- Pour liquid mixture into the dry ingredients and mix with a spoon or fork to make the dough.
- Fold in the chocolate chips.
- Form dough into small golf-ball-size cookies. Place the balls onto a parchment paper-lined baking sheet. Remember, you can always freeze the dough balls and then cook according to directions right out of the freezer. Frozen dough may require 1 to 2 more minutes in the oven, but the cookies come out warm and fresh when you want them.
- Bake the cookies in a preheated 350-degree F oven for 13 to 15 minutes, or until the cookies are raised and light brown around the edges. Cool for 5 minutes and enjoy! Store the cookies in an airtight container to keep them fresh.
