Ingredients
- 1 cup peanut butter
- 2/3 cup brown sugar or brown sugar substitute
- 1 egg
- 1/2 cup vanilla protein powder
- 1/2 cup chocolate chips or sugar-free chocolate chips
Here's how to make it:
- Combine all the ingredients in a large mixing bowl. Mix well to blend. (To reduce sugar, you could use brown sugar substitute and leave out the chocolate chips or use your favorite sugar-free baking chips.)
- Shape the dough into balls (or use a cookie scoop) and place them on a parchment paper-covered baking sheet. Press the balls down to flatten and form a cookie. (The number of cookies will depend on the size of the scoops you make.)
- Bake in a preheated 350-degree F oven for about 12 to 13 minutes or until edges are beginning to brown (ovens vary). Remove and allow to cool before serving. Store cookies in an airtight container.
