After our July 4th get-together, I found my pantry full of hamburger and hot dogs buns. My bowl of salad for dinner was begging for something crispy and crunchy, so I grabbed the two leftover brioche hamburger buns and made homemade croutons. The brioche buns made a rich, crunchy and satisfying crouton that topped my salad perfectly, and held up to the salad dressing. These croutons are a delicious way to use up leftover brioche bread or brioche buns!
To make these quick and easy salad croutons you will need brioche hamburger buns, olive oil and optional black pepper. You can have the croutons oven ready in about two minutes (no joke) and they bake up in about five minutes.
Use these crunchy brioche croutons as a salad topping or put a few on top of a hot bowl of tomato soup. They are also delicious just popped into your mouth as a snack, or put a bowl of them out as an appetizer with a dipping sauce like basil pesto or homemade ranch.

- 2 brioche hamburger buns

- I drizzled about 1 teaspoon of olive oil on the croutons.
- You can cover your baking sheet with parchment paper or aluminum foil for easier cleanup.
- You can easily double or triple the recipe.
- The croutons can go from perfect to burnt like that, so watch them closely.
- If you want to add seasonings to the croutons, try dried Italian seasoning, Greek seasoning, Mediterranean seasoning or Tuscan seasoning.
- Store the croutons in an airtight container on the counter.
Here's how to make it:
- Cut or tear the hamburger buns into cubes. Place on a baking sheet. Drizzle with oil oil and sprinkle with black pepper, if using.
- Bake in a preheated 375-degree F oven until golden and dry, about 5 minutes. Remove and cool.
