Ingredients

• 1/2 cup fresh pineapple
• 1 lime, zested and juiced
• 1/4 cup apple cider vinegar
• 1 tablespoon honey or agave nectar
• 1/2 cup extra virgin olive oil
• kosher salt, to taste
• freshly ground black pepper, to taste

• If you don't have a blender or food processor, finely chop the pineapple and mix it well with the other ingredients with a whisk or a fork.

• If you can't find fresh pineapple, you can use a can of pineapple chunks or rings.

• Keep the salad dressing covered for up to four days in the refrigerator.
