Fresh summer salad dressings are definitely something I want to make more of, and this one is so yummy. I made this pineapple lime salad dressing recipe to top a beautiful quinoa corn and pepper salad, and I'll be using it again to dress simple arugula salads and to drizzle on grilled chicken.
The creamy tropical salad dressing recipe takes just minutes to make in a blender or food processor. But don't worry if you don't have one; you can still make this delicious gluten-free dressing with just a bowl and whisk. Here is your wholesome shopping list for this easy homemade salad dressing: fresh pineapple (read about the health benefits of pineapple), a lime for juicing and zesting, apple cider vinegar, honey or agave nectar, extra-virgin olive oil, kosher salt and black pepper.
Use the pineapple salad dressing to top your favorite salads, grain bowls or as a drizzle on grilled chicken or vegetable kebabs. This salad dressing really does taste like summer and sitting on a beach in a tropical paradise.
