This light and fluffy spinach "soufflé" recipe is a wonderful side dish and might just get you and your family to love spinach. To make this spinach recipe that is grandma-approved you will need cottage cheese (read about the health benefits of cottage cheese), eggs, frozen chopped spinach, salt, ground nutmeg and cheddar cheese. All the ingredients (except one-fourth of the cheese) is baked in a casserole dish for about 45 minutes. Top with the remaining cheese and serve (grandma didn't put it back into the oven to melt!).

Ingredients
- 2 cups cottage cheese
- 3 eggs, beaten
- 30 ounces (3 bags) chopped frozen spinach, thawed and squeezed dry
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 1/2 cups grated cheddar cheese (divided)
Recipe Notes
- You could use any type of cheese you like for this recipe. Monterey Jack, provolone, gruyere, Swiss, fontina or your favorite cheese blend would be delicious.
- Grandma may approve of spicing it up a bit with crushed red pepper flakes.
- Store any leftovers covered in the fridge for up to four days.
Here's how to make it:
- In a mixing bowl, stir together the cottage cheese, eggs, spinach, salt and nutmeg.
- Add 3/4 of the grated cheese. Stir to combine. Spread the mixture in a greased 8x8-inch casserole dish.
- Bake in a preheated 350-degree F oven for about 45 minutes. Remove and top with remaining cheese.
- Serve hot.
