Try this simple, satisfying, nontraditional avocado recipe to get out of that breakfast rut or have breakfast for dinner. For a special treat, add bacon!

Ingredients
- 1 medium avocado
- 2 eggs
- spices, to taste
- cooked bacon, crumbled (optional)
Here's how to make it:
- Cut avocado in half and scoop out half of the inside to make a hole for the egg.
- Crack whole egg into the avocado.
- Bake at 425 degrees F for 15 to 18 minutes. Sprinkle with salt, pepper and desired spices. Add bacon, if using.
