Ingredients
- 4 fish fillets, about 4 ounces each
- 3 teaspoons butter, melted
- 3 tablespoons dry breadcrumbs
- 1 tablespoon flour
Cheese Sauce
- 3 teaspoons flour
- 3/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1 1/2 teaspoons Dijon mustard
Optional Toppings
- 2 green onions, chopped
- chopped jalapeno, to taste
- 1 small tomato, chopped
Here's how to make it:
- Put the melted butter into a shallow bowl and the breadcrumbs and 1 tablespoon flour into another bowl. Season the fish with salt and pepper. Dip the fish into the butter then into the breadcrumb-four mixture to coat. Place in a greased baking dish. For even crispier fish, mist the top with nonstick cooking spray before baking.
- Bake in a preheated 400-degree F oven for about 15 to 20 minutes, or until cooked through. (Use your favorite white fish for this recipe. Catfish, orange roughy, halibut, cod or tilapia are good options.)
- While the fish bakes, whisk the flour and milk together in a saucepot. Bring to gentle boil and cook, stirring, for about 2 minute or until thickened. Stir in the cheese and mustard until cheese has melted.
- To serve, top the fish with some of the cheese sauce. Sprinkle with chopped green onions, jalapeno and tomato, if desired.
