When I am served something I truly enjoy at a restaurant, the odds are high that I will try to recreate it at home. Well, first I will try to get the recipe from someone at the restaurant. If that fails, trail and error usually results in something pretty darn close that I can enjoy at home.

My recent obsession was a Cajun buttermilk sauce served with delicious crispy fried chicken wings at a Cajun seafood restaurant. The sauce was thin, not thick like most dipping sauces, with the twang of buttermilk and a little spice from Cajun seasoning. Not only did I dip my chicken wings in it, but my french fries, catfish and shrimp – and even drizzled it on my white rice.

This Cajun buttermilk sauce tastes pretty close to the restaurant's sauce, and it's so easy to make. All you need is mayonnaise, buttermilk, Worcestershire sauce, garlic and Cajun seasoning. Whisk it all together or shake it up in a mason jar. Serve this sauce with any fried appetizer or with fried, grilled or blackened seafoodfried chicken, grilled chicken, french fries, onion rings or chicken wings. How will you use it?

  • For a pretty presentation, sprinkle with more Cajun seasoning when serving.
  • Add more buttermilk to get desired consistency. You can a thinner consistency because this is a sauce, not a thick dip.
  • Taste your Cajun seasoning so you know the heat level before adding it to the sauce. You can add more, but not take it out.
