Ingredients

• 4 egg whites
• 1 teaspoon vanilla extract
• 1 cup granulated sugar
• 2 cups unsweetened shredded coconut

Recipe Notes

• The amount of cookies depends on the size of the spoonfuls you use.
• You could add some lemon zest to the cookie recipe for a little lemon accent. 
• To fancy them up, melt some chocolate and drizzle it with a fork over the cookies or dip the bottoms of the cookies into the chocolate.
• Be sure to let the cookies cool completely before serving.
• Store the cookies in an airtight container.

Here's how to make it: 

1. Put the egg whites into a mixing bowl. Beat with an electric mixer until stiff, about 5 minutes. Add the vanilla. 
2. In another bowl, combine the coconut and sugar. Slowly add the mixture to the egg whites until well mixed. (Be gentle when mixing so you don't deflate the egg whites.)
3. Using a spoon, drop about 1 heaping teaspoon of dough for each cookie onto parchment paper-lined baking sheets. 
4. Bake in a preheated 300-degree F oven for about 20 minutes, or until lightly browned (do no overbake). Remove to cool.
