This easy roasted carrot recipe can be made with regular carrots or rainbow carrots, which look beautiful when served. Ingredients

• 8 - 10 whole carrots, left whole or cut into large pieces, washed
• 3 tablespoons butter, melted
• 3 tablespoons honey

Here's how to make it: 

1. Put the carrots into a casserole dish. Add the melted butter and honey. Turn the carrots to coat. Season with salt and pepper. (You can leave the carrots whole or cut them into pieces if that's what you prefer. Herbs like thyme, rosemary, oregano, basil or parsley would be a delicious addition and add freshness.)
2. Bake in a preheated 400-degree F oven for about 25 to 30 minutes. Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave. This recipe can easily be doubled or tripled.
