While dunking pita chips on a store-bought creamy feta and cucumber dip I had just discovered, my mind started wandering. Not to just how delicious the creamy Mediterranean dip was, but other ways I could use it in recipes. With a bag of mini cucumbers in the fridge, a cucumber salad recipe was the obvious first choice. This shortcut recipe for a fresh and healthy cucumber salad is a quick, easy and delicious way to get creative with store-bought ingredients. This creamy Mediterranean cucumber salad was so tasty!
Cucumber salads are so versatile and can be made in so many different ways. I chose to go super simple on this one, and only needed three gluten-free ingredients. Here's what to grab to recreate my Greek cucumber salad recipe: mini cucumbers or other seedless cucumbers (check out the health benefits of cucumbers), healthy red onions and a container of feta and cucumber dip (feta may be the healthiest cheese in the world). The ingredients are simply stirred together. This salad is table-ready in about five minutes!
If you can't find the feta and cucumber dip I used, no worries. There are plenty of brands available and other Mediterranean varieties will work. If you can't find one at your local grocery store, use tzatziki instead, which if also full of cucumber flavor.
Variations: You can add anything, pretty much, to a cucumber salad. Stir in some chopped green onion, sliced olives, fresh dill or sliced red peppers for more flavor and nutrition.

Ingredients
- 4 - 5 seedless mini cucumbers, sliced
- 1/4 cup sliced red onion
- 1/4 cup feta and cucumber dip (or more as needed)
Here's how to make it:
- Put the sliced cucumbers into a bowl. (If you use regular cucumbers, you may need to pat them dry with a paper towel.)
- Add the onion and dip. Stir to combine. Adjust the amount of dip to reach your desired consistency. Season with salt and black pepper, if desired. (I added black pepper, but no additional salt.)
- Serve. Garnish with fresh dill and sprinkle with black pepper, if desired.
- Store the salad in an airtight container in the fridge.
