Everyone loves carrots, right? Especially when the carrot recipe has just three ingredients and takes minutes to prep. This easy roasted carrot recipe can be made with regular carrots or rainbow carrots, which look beautiful when served. These gluten-free honey-roasted carrots would be an easy recipe to add to your Thanksgiving menu.
Like we said, you only need to add three simple ingredients to your shopping list to make this vegetarian carrot recipe. Here is your shopping list: carrots (check out the health benefits of carrots), butter and honey. The carrots bake in the oven while you finish up the rest of the meal.

Ingredients
- 8 - 10 whole carrots, left whole or cut into large pieces, washed
- 3 tablespoons butter, melted
- 3 tablespoons honey
Here's how to make it:
- Put the carrots into a casserole dish. Add the melted butter and honey. Turn the carrots to coat. Season with salt and pepper. (You can leave the carrots whole or cut them into pieces if that's what you prefer. Herbs like thyme, rosemary, oregano, basil or parsley would be a delicious addition and add freshness.)
- Bake in a preheated 400-degree F oven for about 25 to 30 minutes. Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave. This recipe can easily be doubled or tripled.
