Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage or andouille sausage, cut into rounds
- 1 onion, chopped
- 1 bell pepper, chopped
- 45 ounces (3 cans) kidney beans, rinsed and drained

Here's how to make it:

Serve over the cooked rice with Tabasco sauce on the side. (If you're not a fan of Tabasco sauce, use your favorite bottled hot sauce.) This recipe reheats beautifully.
