Ingredients
- 3/4 cup butter, softened
- 1 teaspoon vanilla extract
- 3/4 cup brown sugar, lightly packed
- 1 1/2 cups all-purpose flour or gluten-free flour
- 6 ounces dark chocolate or semisweet chocolate, chopped
- 1/2 - 3/4 cup chopped pecans (or hazelnuts, walnuts or almonds)
Here's how to make it:
- Use a stand or hand mixer to cream the butter, vanilla and brown sugar together.
- Add the flour and mix on low until the dough forms. (You could add a pinch of salt, if desired.)
- Spread the dough into an 8x8-inch baking pan (or similar size baking dish) that's been lined with parchment paper. Use clean hands to press the dough into the corners of the pan.
- Bake in a preheated 350-degree F oven for 20 too 25 minutes, or until the shortbread is golden brown.
- When the shortbread comes out of the oven, sprinkle the chocolate all over and use a rubber spatula to spread it over the top.
- Sprinkle the pecans on top.
- Place the pan into the refrigerator for 1 to 2 hours to cool. When cool, cut into 9 (or more) pieces and enjoy! Store the dessert bars in an airtight container to keep them fresh.
