Scottish shortbread is firm, yet tender. This buttery Scottish shortbread recipe simply melts in your mouth. Here's what you will need to make this low-sodium dessert recipe: flour, sugar and butter. That's it! Before you know it, you'll be enjoying a wedge of shortbread with your next cup of coffee or tea.
You will need two shallow round baking dishes or tart pans for this recipe. You can cut this recipe in half, if you prefer.

Ingredients
- 2 3/4 cups all-purpose flour (or gluten-free flour)
- 1/2 cup granulated sugar, plus more for sprinkling
- 1 cup (2 sticks) butter, cut into pieces
Here's how to make it:
- In a large mixing bowl, whisk together the flour and sugar. (If you want the shortbread to be gluten-free, use gluten-free flour.)
- Using a pastry blender or two forks, cut the butter into the flour-sugar mixture. Keep working the dough until it forms a ball. Divide the dough into two equal portions. (You can add 1/4 to 1/2 teaspoon of vanilla extract or almond extract or your favorite baking extract to the batter, if desired.)
- Press each half of the mixture into a shallow round baking dish or tart pan. Prick the surface of the dough all over with a fork.
- Bake in a preheated 325-degree F oven for about 30 to 40 minutes or until it is light brown.
- Cut into triangles and allow to cool. Sprinkle with additional granulated sugar, if desired. Store shortbread in an airtight container.
