Ingredients
- 2 3/4 cups all-purpose flour
- 1/2 cup granulated sugar, plus more for sprinkling
- 1 cup (2 sticks) butter, cut into pieces

- You can add 1/4 to 1/2 teaspoon of vanilla extract or almond extract or your favorite baking extract to the batter, if desired.
- If you want the shortbread to be gluten-free, use gluten-free flour.
- You will need two shallow round baking dishes or tart pans for this recipe. You can cut this recipe in half, if you prefer.

Here's how to make it:
- In a large mixing bowl, whisk together the flour and sugar.
- Using a pastry blender or two forks, cut the butter into the flour-sugar mixture. Keep working the dough until it forms a ball. Divide the dough into two equal portions.
