To make these gluten-free egg bites, here are the nine nourishing ingredients you'll need to gather: extra virgin olive oil, bell pepper (I used orange), green onions, Canadian bacon (I used hickory smoked), eggs, milk, Dijon mustard, cottage cheese and mozzarella cheese. You sauté the vegetables then add the meat before evenly distributing the mixture into the bottom of a muffin tin. Then you add the egg mixture, top with the remaining mozzarella and bake up your delicious egg bites.

Ingredients
- 1 tablespoon extra virgin olive oil
- 3/4 cup bell pepper, diced (I used orange bell pepper but you can use your favorite)
- 1/3 cup green onions (scallions), diced
- 6 ounces fully-cooked Canadian bacon, diced (you also could use ham)
- 8 large eggs
- 1/2 cup milk of choice
- 2 tablespoons Dijon mustard
- 1 cup cottage cheese
- 1 cup mozzarella cheese, shredded (divided)
- salt and pepper, to taste (optional, but I used about 1/4 teaspoon of each)
Here's how to make it:
- In a large skillet over medium-high heat, add the olive oil, bell peppers and green onions. Sauté until crisp-tender, about 2 minutes. Add the Canadian bacon and stir to combine. Remove from heat.
- Evenly distribute the mixture into a muffin pan that's been sprayed with cooking spray.
- In a large mixing bowl, add the eggs, milk and Dijon mustard. Add salt and black pepper, to taste, if desired. Whisk to combine. Add the cottage cheese and half the mozzarella cheese. Stir to combine.
- Evenly distribute the egg mixture on top of the mixture in the muffin tin, being careful not to over-fill each muffin (I filled each one a bit more than three-quarters full).
- Top with the remaining mozzarella cheese.
- Bake in an oven that's been preheated to 350 degrees F until cooked through and golden brown, about 20 to 25 minutes. Allow to cool before removing and serving.
- Store leftovers in an airtight container in the refrigerator or freezer.
