As I type these words, I can still taste this simple microwave egg omelet in my mouth. After watching a short video that came through my newsfeed about how a Michelin-star chef makes his omelets, I jumped up and immediately made one. The Michelin-star chef is José Andrés, and his one-minute omelet is divine.
Chef Andrés adds an interesting, but not surprising to me, ingredient to his omelet: mayonnaise. I discovered mayonnaise eggs years ago. I'm sure this Michelin-star chef uses homemade mayonnaise, but my eggs were creamy, fluffy and fantastic with just a good-quality store-bought mayonnaise.
Here is your gluten-free shopping list for this microwave egg recipe: eggs and mayonnaise. The first omelet I made I used a small shallow bowl, which resulted in a thinner omelet. After eating it and discovering how delicious the omelet was, I tried another (just for research sake) in a deeper ramekin, which resulted in a taller, thicker omelet. Both were great.
You can dress up the high-protein egg, which cooks in 45 seconds (!) in the microwave any way you like. The first omelet was sprinkled with fresh chives, sea salt and black pepper. The second was topped with fresh dill, sea salt and black pepper. The omelet is so rich and creamy, it almost doesn't need salt – or anything for that matter. (Maybe a fork.)
These little one-egg omelets are the perfect quick breakfast, addition to a brunch spread or as a light lunch with a salad or even a high-protein snack. (Read about the health benefits of protein.) The omelets would also work well on a biscuit, toast or English muffin as the base for a breakfast sandwich.

Ingredients
- 1 egg
- 1 tablespoon mayonnaise (heaping)
Here's how to make it:
- Crack the egg into a small bowl. (I used a 2-cup glass measuring cup). Add the mayonnaise.
- Whisk until light and completely combined. (I used a fork, but you could also use a small whisk. If you want to add some salt and pepper now, go ahead!)
- Pour into a small microwave-safe bowl you've oiled lightly. (I rubbed a drop of olive oil in my bowl.)
- Microwave for 45 seconds.
- Turn onto a plate. Add whatever additions you like. Enjoy while hot.
- To make a thicker omelet, pour it into a ramekin. Microwave for 45 seconds.
- Turn onto a plate and add desired seasonings or fresh herbs, if desired.
