You can make marry me chicken in a pan on the stovetop, as a baked casserole and as a soup, among other marry me chicken recipes. You also can make it in the slow cooker. This gluten-free recipe for marry me chicken actually starts on the stovetop and ends in the slow cooker, which makes it extra tender and savory. Yes, it's an additional step, but the chicken turns out so moist and tender, you can cut it with a fork.
To make this irresistible marry me recipe, here's what you need to gather: chicken breast, onion powder, garlic powder, olive oil, butter, chicken broth, cornstarch, minced garlic, Italian seasoning, paprika, sundried tomatoes, cream cheese and fresh basil. The shredded Parmesan cheese topping is optional. You sear the chicken breasts on the stovetop, then create the creamy sauce in the slow cooker. You put the seared chicken into the sauce in the slow cooker and, a few hours later, a super creamy dinner is ready to be served!
You can serve this incredibly tasty chicken for dinner with your favorite side dishes. I served it over rice to soak up the yummy sauce, but it would be equally delicious over pasta or potatoes. It also makes an amazing lunch the next day!

Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons butter
- 2 tablespoons extra virgin olive oil
- 3 cups low-sodium chicken broth
- 4 tablespoons cornstarch
- 2 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
- 1/2 cup sundried tomatoes, diced, plus 2 teaspoons of the oil its in
- 12 ounces cream cheese
- 2 tablespoons fresh basil, diced
Here's how to make it:
- Sprinkle the onion powder and garlic powder onto both sides of the chicken, and season with salt and pepper, to taste, if desired. In a large skillet or sauté pan with sides, over medium-high heat, add the butter and olive oil and stir until combined. Sear the chicken on both sides (this happens quickly), then remove from heat. Set aside. (If you don't want to sear the chicken first, you can skip this step. But you should probably still add the butter and olive oil used for searing the chicken to the sauce in the slow cooker. You could try this recipe with chicken thighs instead of chicken breasts.)
- To your slow cooker, add the chicken broth and cornstarch and whisk until smooth.
- Add the minced garlic, Italian seasoning and paprika. Season with salt and pepper, to taste, if desired. Stir to combine. (If you like a little heat, you can add a sprinkle of crushed red pepper flakes.)
- Add the chicken, including the butter and olive oil it was cooked in, to the mixture and ensure it is covered in the sauce.
- Add the sundried tomatoes and oil, and stir to combine.
- Cover the slow cooker and set to cook on low for 6 hours.
- Chicken is done when it measures 165 degrees F on a food thermometer.
- Add the cream cheese and stir to combine. Sauce should be thick and creamy.
- Serve over rice or pasta, or with your favorite side dishes. Garnish with fresh basil and shredded Parmesan cheese, if desired. Store leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave.
