Chicken and broccoli is a classic combination in all types of cuisines. We especially love Asian chicken and broccoli recipes, so this easy air fryer skinny broccoli chicken recipe was a no-brainer. This easy chicken and broccoli air fryer recipe is on the table in about 25 minutes, and is also low in calories, low in sugar, high in protein and high in flavor. A winner, winner, skinny chicken dinner!
This Asian-inspired chicken recipe doesn't require a long list of ingredients. Here is your short shopping list: boneless/skinless chicken breasts or thighs, fresh broccoli, an onion, vegetable oil, garlic powder, ground ginger, soy sauce or tamari (tamari is gluten-free), sesame oil and rice vinegar. No marinating is required for this quick and easy high-protein dinner. Plus check out the health benefits of broccoli and the health benefits of protein.
The chicken and vegetables are delicious for dinner served over rice or your favorite grain. I served mine over jasmine rice drizzled with chili onion and sprinkled with fresh chopped green onions. This is a wonderful meal-prep recipe, too.
Cooking Note: If you like saucier chicken, you can double the sauce ingredients, but it will add more salt, sugar and calories to the dish.
Cuisine: Asian / American
Prep Time: 5 minutes
Cook Time: 16 to 20 minutes
Total Time: 21 to 25 minutes
Servings: 4
Ingredients
- 1 pound boneless/skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 - 3 cups broccoli florets
- 1 small onion, cut into large chunks
- 3 tablespoons vegetable oil (I used grapeseed oil)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 2 tablespoons low-sodium soy sauce or tamari
- 1 teaspoon sesame oil
- 1 tablespoon rice vinegar
- chili oil, sriracha or chili crisp and chopped green onions, for serving (optional)
Here's how to make it:
- Stir together the vegetable oil, garlic powder, ground ginger, sesame oil, soy sauce or tamari and rice vinegar in a mixing bowl. (Use tamari for a gluten-free dinner.)
- Add the chicken, broccoli and onion to the bowl. Stir to coat the ingredients completely in the sauce. (I added some black pepper, but no additional salt because of the soy sauce.)
- Pour the ingredients into the air fryer. Cook at 380 degrees F for 16 to 20 minutes, stirring halfway through the cooking time. (Chicken is cooked through at 165 degrees F on a food thermometer.)
- Serve the chicken and vegetables over rice. (Be sure to get all the pan drippings from the bottom of the air fryer basket.)
- Garnish with chopped green onions and drizzle with chili oil, sriracha or chili crisp, if desired. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
