Baked chicken and rice is a classic combination. After tasting this golden onion baked rice recipe, my mind turned it into a baked chicken recipe. I took it one step further and actually created it! This golden french onion butter baked chicken recipe with rice is a quick, easy, delicious high-protein dinner.
These crispy baked chicken thighs sitting on a bed of fluffy, flavorful rice has minimal prep and is on the table in about one hour. Here is your shopping list for this high-protein, budget recipe: long-grain white rice, an onion, a can of chicken broth (you can use beef broth), a can of condensed french onion soup, butter, bone-in/skin-on chicken thighs, dried thyme, onion powder and/or garlic powder (or both!) and either more butter or olive oil.

Ingredients
- 1 1/4 cups long-grain white rice (uncooked)
- 1 small onion, chopped or sliced
- 14.5 ounces (1 can) chicken broth (or beef broth)
- 10.5 ounces (1 can) condensed french onion soup
- 6 tablespoons butter, cut into pats
- 4 chicken thighs, bone-in and skin-on
- dried thyme
- onion powder and/or garlic powder
- melted butter (or olive oil)
Here's how to make it:
- Spread the rice into a square baking dish.
- Top with the chopped or sliced onion.
- Pour the broth and condensed soup over the rice. (I used chicken broth.)
- Cover with the butter slices. (I sprinkled with some black pepper.)
- Season the chicken all over with salt and pepper. Nestle the chicken on top of the rice. Sprinkle the chicken with dried thyme and onion powder and/or garlic powder (or both).
- Drizzle the chicken with olive oil or melted butter.
- Cover the pan with aluminum foil or the lid.
- Bake in a preheated 425-degree F oven for 25 minutes. Uncover the pan and continue baking for 25 more minutes.
- Remove from the oven and let it sit a few minutes before serving. Serve the chicken over the rice. Store any leftovers in an airtight container and reheat in the microwave.
