Ingredients 

  • 3 pounds red potatoes, cut into chunks
  • 1 stick (1/2 cup) butter, softened
  • 1/2 cup warm milk
  • 1/2 cup warm heavy cream

Here's how to make it:

  1. Cook the potatoes in salted boiling water until tender, about 20 to 25 minutes. Drain and return to the pot.
  2. Let the potatoes sit over high heat a couple minutes to absorb any remaining water. Turn off the heat.
  3. Mash the potatoes
  4. Add the butter, milk and cream. Season with salt and pepper.
