To make this creamy high-protein pumpkin whipped cottage cheese you will need cottage cheese, pumpkin puree, pumpkin pie spice, vanilla extract and either raw honey or pure maple syrup. Serve this protein-rich treat for breakfast, brunch, dessert or as a healthy snack.

Ingredients
- 2 cups cottage cheese
- 1 cup pure pumpkin puree
- 1 1/2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla extract
- 1/4 cup raw honey or pure maple syrup
Here's how to make it:
- Place the cottage cheese, pumpkin puree, vanilla, honey or maple syrup and spices in a mixing bowl.
- Mix with an electric mixer until fluffy. Stop several times to scrape down the sides of the bowl.
- Divide equally among four small cups or jars and add toppings of choice. (Top the whipped ricotta with granola, coconut whipped cream, grated dark chocolate, shredded coconut, chopped nuts or cocoa nibs.) Store the cottage cheese in an airtight container in the fridge.
