Sometimes nourishing and clean is just what I want in my food. This simple roasted broccoli recipe with lemon is light and refreshing, and is a great side dish for just about any dinner. I served the simple roasted broccoli with sheet-pan chicken and potatoes recipe, but it pairs well with just about any protein, from chicken to beef to pork.

When you cut your broccoli into florets try to make them as uniform in size as possible to create even roasting. The roasted lemon squeezed over the top of the broccoli adds a light fresh taste and, of course, you can always add a bit of Parmesan for some salty goodness on top!
Serve the healthy, lemony broccoli as a side dish with your favorite dinner recipes. You could even toss the broccoli into grain bowls, salads or pasta salads.

Ingredients
- 2 large bunches of broccoli (about 2 pounds)
- 1 large lemon, cut into wedges or circles
- 2 tablespoons olive oil
Optional Ingredients
- 1/3 cup Parmesan cheese
- crushed red pepper flakes, to taste
Here's how to make it:
- Wash and cut the broccoli into florets. Place onto a parchment paper-lined baking sheet. Drizzle with the olive oil and season with salt and pepper, to taste. Toss.
- Place the lemon wedges on top of the broccoli.
- Bake in a preheated 400-degree F oven until broccoli is tender, about 30 minutes. Place the broccoli onto a platter. Squeeze the lemon over the broccoli. Top with grated Parmesan and crushed red pepper flakes, if desired. Serve. Store any leftover broccoli in an airtight container and reheat in the microwave.
