I recently discovered the wonders of almond flour banana bread and all I can say is wow! This moist almond flour banana bread recipe has become my new baking obsession.
This almond flour banana bread recipe is delicious and nutritious. The loaf turned out so rich and moist, with a wonderful crumb and a touch of sweet almond flavor. Almond flour is a great source of fiber and healthy protein, and it's naturally gluten-free (learn about the health benefits of almond flour). To make this easy banana bread recipe, you'll need only one bowl and the following gluten-free ingredients: overripe bananas, eggs, pure maple syrup, butter, vanilla extract, cinnamon, baking soda, baking powder, salt and almond flour. The semisweet chocolate chips are optional. You mix up the batter in a single bowl then bake the loaf until a toothpick comes out clean. There may be nothing quite as comforting as the sweet smell of banana bread baking in a cozy kitchen!

Ingredients
- 3 medium overripe bananas (about 1 cup), mashed
- 3 large eggs
- 1/4 cup pure maple syrup
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 cups fine almond flour
- 1/2 cup semisweet chocolate chips (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed bananas, eggs, maple syrup, melted butter, vanilla, cinnamon, baking soda, baking powder and salt. Whisk to combine.
- Add the almond flour. Stir to combine.
- Fold in the chocolate chips, if using.
- Spread the batter into a 9x5-inch loaf pan that's been sprayed with cooking spray or lined with parchment paper.
- Bake in a preheated 350 degree F oven for about 35 to 50 minutes, or until cooked through and golden brown (a toothpick should come out clean).
- Remove from oven and allow loaf to cool a bit before removing to a wire rack to cool completely. For best results, slice with a serrated knife, then serve. Store leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave.
