- 2 - 3 cups raw or cooked corn kernels (from 4 to 6 ears of corn or defrosted frozen corn)
- 1 large tomato, cut into small pieces, or 1 1/2 cups cherry tomatoes (or a combination of both)
- 1 cup feta cheese, crumbled
- 1/2 cup fresh mint, chopped
- 3 tablespoons extra virgin olive oil
Here's how to make it:
- Combine all the ingredients in a salad bowl. Season to taste with salt and black pepper. (If you don't like feta cheese, use Parmesan cheese or even fresh mozzarella balls.)
- Toss gently to combine. Enjoy! Store any leftover salad in an airtight container in the fridge.
