I feel blessed to have access to amazing fresh produce during the summer at our local farmers market. I love to walk around the markets and see what beautiful fruits and fresh vegetables are available. Next is finding new and creative ways to use these wholesome, farm-fresh ingredients.
This healthy and nutritious peach, corn and tomato salad recipe is perfect for what is in season near me, and the flavors are so tasty and well suited for each other. This gluten-free vegetable and fruit salad is plenty sweet on its own, but the addition of the honey vinaigrette makes it a salad you'll definitely be sweet on.
To make this farm-to-table recipe you will need tomatoes, peaches, fresh corn, kosher salt, black pepper, feta cheese, a neutral cooking oil, white balsamic vinegar, honey and red onion or shallots.
Not only is this summer salad delicious, but you get the health benefits of tomatoes, the health benefits of peaches and the health benefits of corn. Ingredients
Salad
- 2 beefsteak tomatoes, each cut into chunks
- 2 peaches, diced (about 1 cup)
- 1 cup corn kernels, raw (about 2 ears)
- 1/4 teaspoon kosher salt
- 2 ounces feta cheese, crumbled (about 1/2 cup)
- 1/4 teaspoon black pepper
Honey Vinaigrette
- 1/4 cup canola oil, grapeseed oil, vegetable oil or other neutral oil
- 1/3 cup white balsamic vinegar
- 2 teaspoons honey
- 2 teaspoons minced red onion or shallot
- kosher salt and black pepper, to taste

Here's how to make it:
- Combine all the vinaigrette ingredients in a clean jar. Cover with a lid and shake until fully combined.
- In a medium salad bowl, add the tomatoes, peaches and corn. Sprinkle a bit of salt and pepper on top.
- Drizzle with some of the dressing, to taste. Toss.
