Ingredients
- 1 cup all-purpose flour (or gluten-free flour)
- 3/4 cup cocoa powder (preferably dutch-processed)
- 3/4 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 10 tablespoons unsalted butter, at room temperature
- 3/4 cup dark brown sugar
- 2/3 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups chocolate chips (semisweet or bittersweet)
Here's how to make it:
- Whisk together the flour, cocoa powder, kosher salt, baking powder and baking soda in a mixing bowl. Set aside. (For gluten-free cookies, use gluten-free flour.)
- In another large mixing bowl, use an electric mixer to blend butter, brown sugar and granulated sugar together until light and fluffy, about 3 to 4 minutes.
- Add egg and vanilla to sugar mixture and mix well.
- Add the dry ingredients to the wet ingredients. Mix on low until all the dry ingredients are combined.
- Stir in the chocolate chips by hand to combine.
- Wrap the dough in plastic wrap and place in the fridge for 24 or up to 36 hours.
- When you are ready to bake the cookies, preheat the oven to 350 degrees F and place a piece of parchment on a large baking sheet. Roll dough into large golf ball-size portions and place five on the baking sheet.
- Bake for 16 to 18 minutes. You want to take the cookies to still be soft in the middle when you take them out of the oven. Cool on a rack and then repeat with the remainder of the dough.
- Serve warm and enjoy! Store the cookies in an airtight container to keep them fresh.
