Do you ever want a little something sweet but don’t have anything in the house? This small-batch double chocolate cookies recipe is the perfect snack to make for after school or as a coffee break treat. The moist chocolate cookies are sweetened with maple syrup, which has a lower glycemic load than white sugar, and they are so easy to make!
Here is what you need to grab from your fridge and pantry to bake these this easy cookie recipe: natural creamy peanut butter (check out the health benefits of peanut butter), maple syrup, vanilla extract, almond flour, cacao powder, baking soda, chocolate chips and optional instant espresso powder. This sweet recipe makes eight small or four large double chocolate cookies. The batter takes only about five minutes to make!
Nibble on one of these gluten-free cookies for a sweet snack during the day, or enjoy one for a lovely dessert with a cup of coffee or milk.

Ingredients
- 1/3 cup natural creamy peanut butter (no added sugar, oils or salt)
- 6 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 3/4 cup almond flour
- 1/4 cup cacao powder
- 1/2 teaspoon baking soda
- 1/4 cup chocolate chips
Here's how to make it:
- In a medium mixing bowl, add all the ingredients except the chocolate chips. Mix with a fork or spoon to combine. (You could add some instant espresso powder for additional flavor. If you can't find cacao powder, you can substitute cocoa powder.)
- Divide dough into four or eight cookies on a parchment paper-lined baking sheet. Press the dough flat to about 1/4-inch thick. Place the chocolate chips on top of the dough.
- Bake in the preheated oven 350-degree F oven for 11 to 13 minutes, or until the cookies are tender in the middle but cooked on the outside edges.
- Place on a cooling rack for a couple of minutes before enjoying! Store the cookies in an airtight container to keep them fresh.
