You choose the sausage you like and add the nutritional powerhouse of sweet potatoes and the smoky taste of sage. Toss the kale and shallots with the sweet balsamic and add them to the sausages to lightly wilt at the end. Top it all off with the sweetness of cranberries or cherries. You will love the combination of flavors in this easy sheet-pan dinner recipe.

Ingredients
- 16 ounces Italian sausage (hot, mild or regular)
- 2 medium sweet potatoes (about 1 1/2 pounds), cut into 1-inch pieces
- 1/4 cup fresh sage leaves
- 4 tablespoons extra virgin olive oil (divided)
- 1/4 cup dried cranberries or dried cherries
- 3 shallots, thinly sliced (divided)
- 2 tablespoons balsamic vinegar (It’s always worth it to have good-quality balsamic in your pantry)
- 1 bunch kale, stems removed and torn or cut into bite-size pieces
Optional Ingredients
- 1 1/2 teaspoons honey (If you have a good balsamic you won’t need the honey)
- crushed red pepper flakes, for a little spice
Here's how to make it:
- Put the sausages, 2 shallots, the sage and sweet potatoes onto a parchment paper-lined baking sheet. Drizzle with 3 tablespoons of the olive oil, a good pinch of salt and black pepper. Toss to coat. Spread the mixture in an even layer.
- Bake in a preheated 425-degree F oven for 30 minutes, or until it begins to turn golden brown.
- Meanwhile, combine the remaining shallot, remaining olive oil, cranberries or cherries, balsamic and optional honey in a large bowl. (If you want a little spice, add some crushed red pepper flakes.)
- Put the kale into the salad bowl with some salt and pepper. Toss.
- When the sweet potatoes and sausage are cooked remove them to a platter.
- Transfer the kale mixture to the sheet pan and place back in the oven for 3 to 5 minutes, or until warmed thoroughly. Add the kale to the platter and serve immediately! Store any leftovers in an airtight container and reheat in the microwave.
