My mom would always make creamed spinach and, as a kid, I always found a way to not eat it. I sure wish she had found this recipe for the absolute best creamed spinach, because I would have begged her to make it every night! With a wonderfully creamy sauce, this really is the best creamed spinach recipe ever.
You only need seven simple ingredients for this spinach recipe, and you can use either fresh or frozen spinach. Here is your short shopping list for this side dish recipe: frozen or fresh spinach, butter, onion, fresh garlic, heavy whipping cream, cream cheese and Parmesan cheese. Ingredients
- 16 ounces frozen chopped spinach (thawed) or 2 pounds fresh spinach
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3/4 cup heavy whipping cream
- 4 ounces cream cheese, softened
- 1 cup freshly grated Parmesan cheese
- pinch of nutmeg (optional)
Here's how to make it:
- If you are using frozen spinach, press out as much liquid as possible in a mesh strainer. If using fresh, boil a pot of water and cook spinach for 1 minute. Drain and rinse with cold water. Squeeze out the liquid as much as possible.
- Place a skillet on medium heat with the butter and chopped onion. Sauté for 6 to 7 minutes, or until the onion is soft and a bit brown.
- Turn heat to medium-low and add the garlic, heavy cream, cream cheese, Parmesan and the pinch of nutmeg (if using). Keep stirring with a spoon to break up the cream cheese and to melt and blend the cheeses.
- When the cheeses are blended, stir in the spinach until it's heated through.
- If the mixture seems too thick, add a bit more cream. If it seems too thin, just stir and cook for a few extra minutes until it thickens. Taste to see if more salt or pepper is needed. (You can add some crushed red pepper flakes or ground cayenne for a bit of spice.)
- Serve and enjoy! Store any leftovers in an airtight container in the fridge and reheat in the microwave (you can add a splash of heavy cream or milk to loosen it up).
