I first heard about Eleven Madison Park restaurant from the Netflix series 7 Days Out. In one of the episodes, they told the story of this Michelin-rated restaurant as it was reopening. I found it fascinating, and when the restaurant became a 3-star Michelin-rated vegan restaurant, it hopped right onto my bucket list of places I’d really like to visit.
Although I haven’t been able to visit the restaurant yet, I heard about its tradition of sharing granola with their patrons at the end of a meal as a gift. And the chef recently made the granola recipe available to the public. I just had to try it, and now I am hooked. Eleven Madison Park granola is sweet and salty, and it has the wonderful addition of tart cherries in the crunchy clusters of oats. I made mine with a bit less sweetener and salt than the original, but it is no less delicious and so easy to put together.

Ingredients
- 2 3/4 cups rolled oats (regular or gluten-free)
- 1 cup shelled pistachios, unsalted
- 1 cup unsweetened coconut chips
- 1/3 cup pumpkin seeds, unsalted
- 1 teaspoon kosher salt (not table salt)
- 1/3 cup light brown sugar
- 1/4 cup maple syrup
- 1/3 cup extra virgin olive oil
- 3/4 cup dried sour cherries
Here's how to make it:
- Line a large baking sheet with parchment paper and preheat your oven to 300 degrees F. In a large mixing bowl, add the oats, pistachios, coconut flakes, pumpkin seeds and salt. (If you can't find coconut chips, you could use shredded coconut. Oats are naturally gluten-free, but if you need to be sure, use gluten-free oats.)
- Place maple syrup, olive oil and brown sugar in a small saucepan over low heat. Stir and heat mixture until the brown sugar is completely dissolved.
- Pour the liquid sugar mixture over the dry ingredients and toss gently to coat. Place into the oven and bake for 35 to 40 minutes, or until the mixture is golden brown, mixing the granola once or twice during cooking. Remove from the oven.
- Add the cherries and gently mix them into the granola.
- Let the mixture cool before storing in an airtight container. I always store my granola in the fridge after a couple of days to extend the shelf life.
