Ingredients
- 3 pounds bone-in, skin-on chicken thighs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 tablespoons butter, melted
- 2 tablespoons hot sauce
- 1 lime
- 2 tablespoons honey
Here's how to make it:
- Line a large baking sheet with aluminum foil. Place the chicken with the skin side up on the foil and season with the garlic powder and onion powder. Season to taste with salt and black pepper. Bake in a preheated 450-degree F oven for 20 minutes.
- While the chicken roasts make your butter sauce by placing the melted butter and hot sauce in a small bowl and whisking to combine. Choose the hot sauce based on the amount of heat you want. Some hot sauces are hotter than others, so make sure to choose based on what spice level you prefer.
- Pour half of the butter mixture into another bowl and set aside. Brush one of the bowls on the chicken and return it to the oven for another 10 to 15 minutes, or until the internal temperature of the chicken reaches 165 degrees F.
- While the chicken is cooking again, zest the clean lime into your reserve butter mixture and then cut the lime in half. Squeeze half of the lime’s juices into the butter and add the honey. Whisk to combine.
- When the chicken is finished cooking remove it from the oven and brush the remaining butter-lime sauce on all of the thighs. Serve immediately. Store any leftover chicken in an airtight container in the fridge.
