You ever crave something hot, juicy and crispy? Me, too. When my recipe for Tuscan fried chicken came through my news feed, my stomach growled. But, I only had chicken breasts, no bone-in chicken pieces. What to do? Create this easy crispy Tuscan fried chicken breast recipe! This chicken recipe uses the same ingredients, but with boneless/skinless chicken breasts. Delish!
To make this crispy chicken dinner you will need just seven simple ingredients. Here is your shopping list: boneless/skinless chicken breasts, garlic powder, dried thyme, dried or fresh rosemary (I used dried rosemary), fresh lemon juice, flour (gluten-free or all-purpose) and olive oil for frying. Depending on the thickness and size of your chicken breasts (pound them out so they cook evenly), the chicken cooks up in about eight to 10 minutes in a skillet.
Serve these juicy chicken breasts for dinner with your favorite side dishes. I served mine with a fresh salad and garlic butter roasted potatoes.
Cuisine: American / Italian
Prep Time: 5 minutes (more if you marinate the chicken)
Cook Time: 8 to 10 minutes
Total Time: 15 minutes
Servings: 2
- 2 boneless, skinless chicken breasts, pounded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon rosemary (fresh or dried)
- 1 tablespoon lemon juice
- 1/8 cup all-purpose flour or gluten-free flour
- olive oil, for frying
Here's how to make it:
- Season both sides of the chicken breasts with garlic powder, dried thyme, rosemary and lemon juice. Season with salt and black pepper to taste. If you have time, let them chicken marinate on the counter for up to 30 minutes or in the fridge for as long as you like. You could use boneless chicken thighs instead of breasts.
- When ready to cook, dust the chicken breast with flour.
- Heat a little olive oil in a skillet. (I used a cast iron skillet.) Add the chicken (tongs work great for this) and cook until golden brown and crispy on the bottom.
- Flip the chicken over and continue to cook until golden brown and cooked through. The cooking time will depend on the size and thickness of your chicken breasts. Chicken is cooked through at 165 degrees F on a food thermometer.
- You could sprinkle the chicken with a little Parmesan cheese when serving. This recipe can be doubled to serve four.
