I love having meatballs in the freezer ready to come to the rescue when I need a quick dinner. These super simple and really tasty chicken or turkey meatballs are so great to add to a plain pasta, pop into a soup (like this delicious Italian wedding soup) or just to serve as an appetizer with some Italian red sauce on the side.
Ground chicken or ground turkey works great to keep these gems healthy, and the addition of Italian chicken sausage (extra flavor!) adds some extra kick and wonderful taste. As always, if you are missing any of the ingredient use your fridge and pantry to fill in the gaps. This time I used gluten- free panko breadcrumbs and whole milk. I couldn't find spicy Italian sausage so I just used mild and the taste was still wonderful.
Here is your shopping list to make this easy homemade chicken meatballs recipe: breadcrumbs (fresh or panko), low-fat milk, an egg, Parmesan cheese, fresh parsley or parsley flakes, fresh garlic, black pepper, salt, spicy Italian sausage and ground chicken (check out the health benefits of poultry). This high-protein recipe bakes up in about 20 minutes.

Ingredients
- 3/4 cup fresh breadcrumbs (you can use panko breadcrumbs)
- 1/4 cup low-fat milk
- 1 large egg, beaten
- 1/3 cup finely grated Parmesan cheese
- 1/4 cup finely chopped flat-leaf parsley (fresh is best but can substitute 2 tablespoons parsley flakes)
- 2 large cloves garlic, grated
- 1/2 teaspoon ground black pepper (or to taste)
- 1/2 teaspoon salt (or to taste)
- 4 ounces (1 link) spicy Italian chicken sausage, casing removed
- 12 ounces ground chicken or ground turkey
Here's how to make it:
- Mix the breadcrumbs and milk in a medium bowl. Set to the side for 10 minutes. For a gluten-free dinner, use gluten-free breadcrumbs or gluten-free panko.
- After 10 minutes have passed, add the cheese, egg, parsley, garlic, salt and pepper. Stir to combine.
- Add ground meat and crumbled or sliced sausage to the breadcrumb mixture until just combined. For some spice, add crushed red pepper flakes.
- Make 24 meatballs and place on a baking sheet that's lined with parchment paper, a silicone mat or aluminum foil.
- Place your oven rack about 8 inches below the broiler. Bake the meatballs under the broiler for about 8 to 10 minutes, or until they are done and reach an internal temperature of 165 degrees F on a food thermometer.
- Serve immediately, use in recipes or for meal prepping.
