Thousand island dressing – which is typically made with mayonnaise, ketchup and pickle relish – is the "secret sauce" often used on burgers and Reuben sandwiches. I recently used thousand island in this cheesy Reuben chicken casserole recipe and we just loved it, which is why I decided to make more recipes using this delicious dressing.
Variations: As an alternative to apricot jam, you could try this recipe with peach preserves.
It's so easy to make this tangy delicious baked chicken dinner. You need only five gluten-free ingredients: chicken thighs, thousand island dressing, apricot preserves, a packet of onion soup mix and garlic powder. You simply mix together the sauce ingredients, coat the chicken in the sauce then bake until it's cooked through and bubbling.
You can use store-bought salad dressing or make your own thousand island dressing. As an alternative to thousand island, you could try this recipe with Russian or Catalina salad dressing. You can use store-bought onion soup mix, or make your own onion soup mix.
You can serve this moist and juicy chicken for dinner with your favorite vegetables or some simple side dishes. I served it over rice to soak up the succulent sauce – highly recommended. A fresh parsley garnish adds some nice color!

Ingredients
- 1 pound (about 6) boneless/skinless chicken thighs
- 8 ounces (1 bottle) thousand island salad dressing
- 8 ounces apricot preserves or jam
- 1 ounce (1 packet) onion soup mix
- 1/2 teaspoon garlic powder
Here's how to make it:
- In a large mixing bowl, add the dressing, jam, onion soup mix and garlic powder. Season with black pepper, to taste, if desired. Stir to combine.
- Add the chicken and coat it in the mixture. If marinating the chicken, cover and refrigerate while marinating. (I used boneless, skinless chicken thighs, but you also could use chicken breast. Keep in mind that cooking time may be affected. Marinating the chicken in the sauce ahead of time adds even more flavor. If you have time, marinate the chicken in the sauce (covered in the refrigerator) for a couple of hours (and up to 10 hours).)
- In a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray, add the chicken. Ensure that the sauce is evenly covering the chicken.
- Bake in a preheated 350-degree F oven for about 45 minutes or until cooked through and bubbling. Remove chicken halfway during baking time to baste it with the sauce. Chicken is done when it measures 165 degrees F on a food thermometer.
- Serve immediately. This sticky chicken is particularly good served over rice to soak up the succulent sauce! Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
