Inspired by this baked Reuben chicken recipe, this easy Reuben casserole is creamy and tangy, making it an irresistible comfort food meal. Here are the gluten-free ingredients you need to make this super tasty chicken dinner: extra virgin olive oil, onions, green peppers, sauerkraut, thousand island salad dressing, chicken breast and Swiss cheese slices. You cook the vegetables then combine them with the dressing. You spread the mixture over the chicken, top it with the cheese then bake the high-protein casserole until cooked through and golden. So simple. 

Serve this zesty Reuben chicken casserole on its own or with your favorite side dishes. I served it over rice with a fresh parsley garnish. If you want to make it into a sandwich, it would be amazing with some fresh baked bread!

Ingredients

• 1 1/2 tablespoons extra virgin olive oil
• 1 cup onions, diced
• 1 cup green peppers, diced
• 14.4 ounces (1 can) sauerkraut, drained
• 8 ounces thousand island salad dressing
• 1 1/2 pounds boneless/skinless chicken breast, cut into pieces of equal size (I got 10 pieces)
• 7 slices Swiss cheese
• fresh parsley, for garnish (optional)

Here's how to make it:

1. In a large skillet or sauté pan over medium heat, add the olive oil, onions and green peppers. Sauté until crisp-tender, about 4 to 5 minutes.
   
2. Add the drained sauerkraut and stir to combine. Remove from heat.
   
3. Add the dressing to the vegetables and stir to combine. (You can use store-bought salad dressing or make your own homemade thousand island salad dressing.)
   
4. Arrange the chicken breasts evenly in a 13x9-inch baking dish that's been sprayed with cooking spray. Season with salt and black pepper, to taste, if desired.
   
5. Evenly spread the vegetable mixture on top of the chicken breasts.
   
6. Top with the cheese slices. (I tore one slice in half to make it fit.)
   
7. Cover the pan with aluminum foil. Bake in a preheated 350 degree F oven for 20 minutes. Remove from oven and take off aluminum foil.
   
8. Put uncovered casserole back into the oven until chicken is cooked through and casserole is golden brown, about 10 minutes. Chicken is done when it measures 165 degrees F on a food thermometer.
   
9. Serve on its own or with your favorite sides. Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator.
