Chicken is always a good choice for dinner. Baked French chicken. Baked Caesar chicken. Crispy German chicken. Yes, I love to create easy baked chicken recipes. Salad dressing is one of my favorite store-bought ingredients to use when baking chicken. It's already prepared and packs a lot of flavor – and there are so many different kinds to pick from. This new chicken creation uses green goddess salad dressing.
To make this crispy baked green goddess chicken dinner you will need bone-in chicken thighs (or whatever pieces you like), olive oil and green goddess salad dressing. If you'd like, also grab a lemon for zesting, parsley flakes and fresh herbs. The dried parsley flakes, lemon zest and fresh herbs are optional. I tend to use parsley flakes in a lot of my recipes and it's mainly for color. But I loved the fresh twang the lemon zest gave the chicken and the freshness of the herbs, so I recommend adding them.

Ingredients
- 4 - 6 bone-in chicken thighs (or your favorite chicken pieces)
- 2 tablespoons olive oil
- 8 ounces green goddess salad dressing
Optional Ingredients
- 1 - 2 teaspoons lemon zest
- 1 - 2 tablespoons chopped fresh herbs (I used fresh oregano, thyme and dill)
- parsley flakes
Here's how to make it:
- Heat the olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper (I used Morton Nature's Seasons). Add the chicken pieces, skin side down, and cook until golden brown and crispy, about 4 to 5 minutes. Flip them over and cook about 1 more minute.
- Put the chicken into a baking dish.
- Pour the salad dressing around the chicken pieces. Sprinkle with parsley flakes, if using. Bake in a preheated 375-degree F oven for about 30 minutes or until almost cooked through.
- Sprinkle with the lemon zest and fresh herbs, if using. Continue cooking about 5 more minutes or until internal temperature is 165 degrees F.
- Spoon the sauce over the chicken. Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
