Thank goodness for soup season! If you're a soup lover like me, then you love this time of year. I love to make soup and, during the holidays, there are so many extra-special ingredients to put into it. After Thanksgiving, I found myself in the wonderful position of having not only leftover turkey but also some unused sweet potatoes. Enter this easy turkey and sweet potato soup recipe. It's like the holidays in a bowl!
To me, a good soup is all about flavor and nutrition. There’s nothing more soothing than a steaming bowl of soup, so it may as well taste as amazing as it feels. This savory turkey and sweet potato soup recipe is loaded with the health benefits of turkey and the health benefits of sweet potatoes (not to mention plenty of other vegetables).
You need only eight ingredients to make this soothing soup: extra virgin olive oil, sweet potatoes, onion, celery, broccoli, garlic, chicken broth and cooked turkey. You simply simmer the vegetables then add the turkey and serve it up, all in only about 30 minutes.
I served this flavorful gluten-free soup with a fresh parsley garnish, and we all agreed that it was the best way to enjoy our Thanksgiving bounty all over again!

Ingredients
- 3 tablespoons extra virgin olive oil
- 4 small sweet potatoes, peeled and diced (about 3 cups)
- 1 cup onion, diced
- 2 cups celery, diced
- 2 cups broccoli, diced
- 2 teaspoons minced garlic
- 48 ounces chicken broth
- 3 cups cooked turkey, diced
- fresh parsley, for garnish (optional)
Recipe Notes
- To reduce sodium, use low-sodium broth.
- You can add more or less vegetables or turkey, to taste.
- Store leftover soup in an airtight container in the refrigerator or freezer.
Here’s how to make it:
- Add olive oil to a soup pot or dutch oven. Over medium heat, sauté sweet potatoes, onions, celery, broccoli and garlic. Add sea salt and black pepper, to taste, if desired. Cook about 5 minutes, or until crisp-tender.
- Add broth and stir to combine. Bring to a boil then reduce heat and simmer for about 10 minutes.
- Add turkey and simmer for an additional 5 minutes or until cooked through.
- Garnish with fresh parsley, if desired, and serve.
