20-Minute Creamy Sweet Potato Soup Recipe Is a Bowl of Yum

It's not only soup season, but we're calling it sweet potato season, too! Creamy, sweet and savory, this sweet potato soup recipe is calling your name. With a hint of ginger and garlic, and a little cheese, it will be your new go-to soup recipe.

To make this creamy, gluten-free sweet potato soup recipe you will need sweet potatoes, a carrot, olive oil, onion, garlic, fresh ginger, vegetable broth and cheddar cheese. The vegetarian ingredients are cooked on the stovetop and then blended together. Quick, easy and you get the health benefits of sweet potatoes in every bite! 

Serve this creamy hot soup for lunch or for dinner with a side salad.

  • 2 pounds sweet potatoes, peeled and cubed
  • 1 carrot, peeled and chopped (optional)
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh minced ginger
  • 4 cups vegetable broth
  • 1 cup grated cheddar cheese
  • optional toppings: splash of cream, chopped chives, chopped green onions

  • If you don't have fresh ginger, you could add ground ginger.
  • Sprinkle with some ground ginger for even more fall flair! 

Here's how to make it: 

  1. Heat the olive oil in a soup pot. Add the onion and cook until soft. Add the garlic and ginger and cook about 1 minute.
  2. Add the sweet potatoes and carrot to the pot along with the broth. Bring to a boil, reduce heat and simmer until the potatoes are tender, about 8 minutes. 
  3. Puree the soup with an immersion blender or pulse in batches in a regular blender. Once blended, add the cheddar cheese and season with salt and pepper, to taste. Heat through. Garnish as desired and serve.
