When my Minnesotan husband brought home some fresh-caught walleye, I knew I had to come up with the perfect recipe to do it justice. Minnesota, the “Land of 10,000 Lakes," is known for its walleye (a freshwater whitefish in the perch family), and my husband grew up eating it. So whenever I make walleye recipes, they have be really good. My husband told me that this Parmesan-crusted baked walleye recipe is his favorite so far. "It's downright delicious!" he said.
Walleye is a firm yet delicate fish with a buttery texture, so I find that the simplest walleye recipes are the best ones. This Parmesan-crusted walleye recipe is moist and flavorful, with a crispy coating that we couldn't get enough of. Using just seven ingredients, it's a delicious seafood (lake food?) dinner in only about half an hour. Plus, check out the health benefits of eating fish.
Here are the simple ingredients you'll need to gather for this gluten-free fish recipe: fresh walleye fillets, an egg, almond flour, shredded Parmesan cheese, garlic powder, onion powder and smoked paprika. You dip the fish in the beaten egg then coat it in the tasty Parmesan mixture. You bake it until it's crispy and golden. So easy!
Serve this savory seafood dinner on its own or with potatoes, pasta or rice and your favorite vegetables. I served it with some golden beets and it was just delish.

Ingredients
- 1 pound fresh walleye fillets
- 1 egg
- 1/3 cup almond flour
- 1/3 cup shredded Parmesan cheese
- 1/3 teaspoon garlic powder
- 1/3 teaspoon onion powder
- 1/4 teaspoon smoked paprika
Recipe Notes
- Instead of almond flour, you could use regular or gluten-free panko breadcrumbs.
- Instead of shredded Parmesan, you could use finely-grated Parmesan.
- You can garnish the fish with fresh parsley or lemon slices, if desired.
- This recipe would be fun to try with other types of fish like salmon, halibut, cod or other whitefish.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here’s how to make it:
- In a small bowl, beat the egg and set aside.
- In a medium bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder and smoked paprika. Season with sea salt and black pepper, to taste. Stir to combine.
- Dip each fillet in the beaten egg, ensuring each is coated. Then, roll each fillet in the Parmesan mixture, ensuring each is coated in the mixture. Place coated fillets in a 13x9-inch baking pan that's been sprayed with cooking spray (I lined mine with aluminum foil for easier cleanup). Sprinkle any remaining mixture evenly across the top of the fillets.
- Bake in a preheated 400 degree F oven for about 15 minutes, or until fish is cooked through, crispy and golden (walleye turns white and flaky when done cooking).
- Garnish with fresh parsley or lemon slices, if desired, and serve.
